RUJAK MARKISA - passion fruit salad

 Rujak markisa, or passion fruit salad, is a delightful Indonesian dish that combines the sweet and tangy flavors of passion fruit with a spicy-sweet dressing. Here's a simple recipe to make rujak markisa:


Ingredients:

  • 4-5 ripe passion fruits (markisa), pulp scooped out
  • Assorted tropical fruits (such as pineapple, mango, papaya, guava, jicama, cucumber), peeled and sliced or julienned
  • For the dressing:
    • 2-3 red chilies (adjust according to your spice preference), finely chopped
    • 2 cloves garlic, minced
    • 1 tablespoon palm sugar or brown sugar
    • Juice of 1-2 limes or lemons
    • Salt to taste
  • Optional toppings:
    • Roasted peanuts, coarsely ground
    • Crispy fried shallots
    • Shrimp paste (petis) or fermented shrimp paste (terasi), as a condiment

Instructions:

  1. Prepare the assorted tropical fruits by peeling and slicing or julienned them into bite-sized pieces. Arrange them on a serving platter.
  2. Cut the passion fruits in half and scoop out the pulp into a bowl.
  3. In a separate bowl, prepare the dressing by combining the finely chopped red chilies, minced garlic, palm sugar, lime or lemon juice, and salt. Adjust the seasoning to your taste preferences by adding more sugar, salt, or lime/lemon juice if needed.
