ES DALUMAN - traditional Indonesian dessert
Es daluman is a traditional Indonesian dessert made from the extract of the leaves of a type of red algae called "gracilaria" or "gelidium." It's commonly found in Bali and other parts of Indonesia. Here's a simple recipe to make es daluman:
Ingredients:
- 50 grams of dried gracilaria algae (daluman)
- 1 liter of water
- Palm sugar or cane sugar to taste
- Coconut milk (optional)
- Ice cubes
Instructions:
- Rinse the dried gracilaria algae (daluman) under cold water to remove any impurities.
- In a large bowl, soak the dried daluman in water for about 30 minutes to 1 hour, or until it becomes soft and rehydrated.
- Once the daluman is soft, squeeze out the excess water and discard it.
- In a blender or food processor, blend the rehydrated daluman with fresh water until smooth.
- Strain the blended mixture through a fine sieve or cheesecloth to extract the liquid, discarding any solids.
- Sweeten the daluman liquid with palm sugar or cane sugar to taste, stirring until dissolved.
- If desired, add a splash of coconut milk to the sweetened daluman liquid for extra creaminess.
- Pour the sweetened daluman liquid into serving glasses filled with ice cubes.
- Serve the es daluman chilled and enjoy as a refreshing dessert or snack.
Es daluman is known for its unique texture and refreshing taste, often enjoyed during hot weather. The addition of coconut milk provides a creamy richness, while the palm sugar adds a hint of sweetness. Feel free to adjust the sweetness according to your taste preferences. Enjoy your homemade es daluman!
